Zucchini and Cream Sauce

We grew A LOT of Zucchinis this year. When they grow, they grow... I juiced some of them, and froze the juice, I shredded and froze some of them, we ate some fresh, and are still working on one. Jeff HATES Zucchini and I figured I should be creative. So I looked up Zucchini recipes on line. I tried this recipe last night, it has the BEST sauce!

Chicken and Zucchini With Garlic Cream Sauce

Ingredients:
· 1/4 cup butter
· 3 whole chicken breasts, halved
· 3 cups zucchini, sliced 1/8-inch thick
· 1/2 cup diced green onions
· .
· Garlic Cream:
· 2 tablespoons butter
· 1 large clove garlic, minced
· 3 tablespoons flour
· 1 (3 oz) package of cream cheese
· 1 can chicken broth
· 1/2 tsp. pepper

Preparation:
Chicken:In skillet, melt 1/4 cup butter; add chicken breasts. Cook, turning once, until chicken is browned and fork tender. Add zucchini and onions. Continue cooking, stirring until zucchini is crisp-tender.


Garlic Cream Sauce:In 2 quart saucepan, melt 2 tablespoons butter; add garlic. Cook for 1 minute, then stir in flour and cook until smooth and bubbly. Add remaining ingredients and continue cooking, stirring occasionally, until sauce is smooth and thickened. This is pretty served on a bed of rice - layer the zucchini and then the chicken breasts on top then pour sauce over each chicken breast.

I sliced the zucchini on my Ultimate Mandoline. I LOVE the way it slices! The zucchini were thin and no one had to "choke" them down.

The zucchini and green onions were from our garden.

I crushed the garlic with the Garlic Press. Again I LOVE it! I used to never use fresh garlic. But it is so much better for you! And easy with this!

I used the Stainless/Silicone Sauce Whisk to stir the sauce. This was the perfect tool for the job! I admit I don't do a lot of sauces, but this was great! My sauce was smooth, bubbly, and thick, at all the right times.

This sauce was so good. It was GREAT with the zucchini. My boys actually ate their dinner! Jeff ate some of the zucchini (when it scooped up with chicken, on accident!). Next time I am going to add mushrooms and put it over linguine noodles! I think this sauce would be great for rice, pasta, peas, broccoli, chicken, pork, and shrimp. It was so good! I will definitely be trying these ideas!
